These are great to make for a simple brunch and serve with fruit, or a perfect make-ahead breakfast to reheat and eat on the run.


10 ct. Hungry Jack biscuits (cut in half, then in thirds)
1 lb. sausage maple flavored - cooked and drained
3 eggs
4 Tbsp. half & half or milk
1/2 cup parmesan cheese
1/2 cup cheddar cheese
3/4 cup cottage cheese
salt & pepper

Mix all ingredients together.  Spray mini muffin pans with Pam.  (You can use regular-sized but should adjust portions.)

Put 1 biscuit slice in the bottom of each mini muffin cup.  Fill with 1/2 to 1 Tbsp of mix.

Bake at 350 for 20 minutes.

Refrigerate or freeze any leftovers.
