My mom makes this at every family dinner and its pretty amazing.  It's from Jane - so you know its easy.  These are what I call dump recipes.... "mix all ingredients and dump into a pan and cook."  My British mother took quite well to Texas I feel...


2 lbs frozen hash brown potatoes, thawed (O'brian with onion and bell pepper - or add separately)
12 oz. sour cream
1 stick butter, melted
1 can cream of chicken soup
2 tsp. salt
1 cup grated cheddar cheese

Mix all together and pour into a greased 9 X 13 pan.  Bake for 30 - 45 minutes at 325.
