Easiest dessert EVER!


2 cups pecans, chopped
1/2 cup butter
2/3 cup brown sugar
1 can (14 oz.) sweetened condensed milk
1 tsp. vanilla

Place pecans on a large glass plate.  Microwave on high for 6 minutes, stirring every 2 minutes.  Set aside.  Using a large glass measuring cup (4 cups or larger) microwave butter on high for 1 minute.  Stir in brown sugar and condensed milk.  Microwave on high for 7 minutes, stirring every 2 minutes.  Remove from microwave and beat with a wooden spoon until stiff - about 5 minutes.  Stir in vanilla and roasted pecans.  Spread in a lightly buttered square glass dish.  Chill until firm and cut into bite-sized squares.
